Baby Sepia and Avocado Salad

Ingredients:

  • 400 g of Baby Sepia ( Foodpax )
  • 2 Tbsp of Vinegar
  • 1 Bay-leaf
  • 4-5 Black Pepper Corn Kernels
  • Salt
  • 5-6 Lettuce Leaves thickly cut
  • 2 Avocadoes cut in cubes
  • ½ Red Grapefruit sliced
  • 1 Egg Yellow
  • 1 Tbsp of Vinegar
  • ¼ Tsp of Mustard
  • ¼ Tsp of Sugar
  • Juice from the half Red Grapefruit
  • 3 Tbsp of Virgin Olive Oil
  • Salt and Pepper

Preparation:

  1. Boil the Baby Sepia in warm water for 10 minutes, adding the vinegar, the Basil, salt and pepper
  2. Mix the Baby Sepia, the lettuce, the avocado and Red Grapefruit in a large platter
  3. In a bowl mix the egg Yellow, the Mustard, the Vinegar, the Sugar, the Red Grapefruit Juice, salt and pepper. At the end add slowly the olive oil and stir
  4. Pour the dressing over the salad
