Ingredients:
- 400 g of Baby Sepia ( Foodpax )
- 2 Tbsp of Vinegar
- 1 Bay-leaf
- 4-5 Black Pepper Corn Kernels
- Salt
- 5-6 Lettuce Leaves thickly cut
- 2 Avocadoes cut in cubes
- ½ Red Grapefruit sliced
- 1 Egg Yellow
- 1 Tbsp of Vinegar
- ¼ Tsp of Mustard
- ¼ Tsp of Sugar
- Juice from the half Red Grapefruit
- 3 Tbsp of Virgin Olive Oil
- Salt and Pepper
Preparation:
- Boil the Baby Sepia in warm water for 10 minutes, adding the vinegar, the Basil, salt and pepper
- Mix the Baby Sepia, the lettuce, the avocado and Red Grapefruit in a large platter
- In a bowl mix the egg Yellow, the Mustard, the Vinegar, the Sugar, the Red Grapefruit Juice, salt and pepper. At the end add slowly the olive oil and stir
- Pour the dressing over the salad
