Cod Fillet with Leeks and Artichokes

Ingredients:

  • 1 kg of Cod Fillet ( Foodpax )
  • Juice from 1 Lemon
  • 2 Tbsp of Virgin Olive Oil
  • Salt and White Pepper
  • 3 Tbsp of Butter
  • 1 Leek cut in thin strips
  • 2 Carrots cut into medium thin strips
  • 1 packet 450g Artichokes ( Foodpax ) cut in thin slices
  • 2 Tbsp of Ouzo
  • 3 Tbsp of White Dry Wine
  • 1 Cup of Fresh Cream
  • Salt and Pepper

     

Preparation:

  1. Defrost the fish fillet, cut into individual portions and mix with lemon juice, olive oil, salt and pepper
  2. Place in a tray in the oven cover with aluminum foil for about 15 minutes
  3. Melt the butter in a small pan. Sauté the Leek, carrot and artichokes
  4. Pour the ouzo in the pan and light it. When the flame dies add the wine, fresh cream, salt and pepper
  5. Boil on low heat for 5 minutes
  6. Pour sauce over the fish and serve with boiled potatoes
