Ingredients:
- 1kg Octopus ( Foodpax )
- ½ Cup of Virgin Olive Oil
- 4-5 segments of Garlic finely chopped
- 2 Onions medium cut
- 3-4 Bay Leaves
- 7-8 Black Pepper Corn Kernels
- 1 Tsp of Oregano
- 1 Tbsp of Tomato Paste
- 1 Small Cup of Vinegar
- 1 Cup of Red Dry Wine
Preparation:
- Wash the Octopus well and cut into small pieces
- Place the Octopus in a pan with water and cook for about 15 minutes with adding anything else
- Place the boiled Octopus in a bowl
- In the pan add olive oil, the finely chopped garlic and the medium cut onions and sauté for two minutes
- Add in the pan the bay leaves, the black pepper kernels, oregano, tomato paste diluted in little warm water, vinegar and the red dry wine to cover octopus
- Add the octopus, stir, cover pan and cook for 25 minutes at low heat
- Add water if needed
