Octopus in Red Wine Sauce

Ingredients:

  • 1kg Octopus ( Foodpax )
  • ½ Cup of Virgin Olive Oil
  • 4-5 segments of Garlic finely chopped
  • 2 Onions medium cut
  • 3-4 Bay Leaves
  • 7-8 Black Pepper Corn Kernels
  • 1 Tsp of Oregano
  • 1 Tbsp of Tomato Paste
  • 1 Small Cup of Vinegar
  • 1 Cup of Red Dry Wine

Preparation:

  1. Wash the Octopus well and cut into small pieces
  2. Place the Octopus in a pan with water and cook for about 15 minutes with adding anything else
  3. Place the boiled Octopus in a bowl
  4. In the pan add olive oil, the finely chopped garlic and the medium cut onions and sauté for two minutes
  5. Add in the pan the bay leaves, the black pepper kernels, oregano, tomato paste diluted in little warm water, vinegar and the red dry wine to cover octopus
  6.  Add the octopus, stir, cover pan and cook for 25 minutes at low heat
  7. Add water if needed
  8.
