Merlouza Fish Fillet in Batter and Herbs

FOODPAX CHICKEN FINGERS AND BROCCOLIIngredients:

  • Salt and Pepper
  • 1kg Merlouza Fish Fillet ( Foodpax )
  • Juice from 1 Lemon
  • 2 Tbsp of Virgin Olive Oil

For the batter you will need:

  • 1 Glass of beer
  • 1½ Cup of Flour
  • ½ Cup of Corn Flour
  • 1 Tsp of Baking Powder
  • 1 Egg
  • 1 Tbsp of Vinegar
  • ½ Tsp of Sugar
  • 1 Tsp of Basil
  • 1 Tsp of Dill
  • 1 Tsp of Tarragon Leaves
  • 1 Tsp of finely chopped Parsley
  • Salt & Pepper

Preparation:

  1. Defrost the fish fillet, cut into portions and marinate in lemon juice, olive oil, salt and pepper. Cover the bowl and place it in the fridge for two hours.
  2. Mix in a bowl the flour, corn flour and baking powder
  3. Add the egg, beer, vinegar, sugar, basil, dill, Tarragon Leaves, parsley, salt and pepper.
  4. Beat the ingredients until thick batter is formed
  5. Heat cooking oil in a pan at 170°C
  6. Dip the fish fillet in the batter and fry until a golden brown color is reached
  7. Place Fish fillet on kitchen paper towel to absorb excess oil and serve
